Meatballs suit either a Scandinavian-style cream gravy or a rich brown onion gravy, both built in the pan the meatballs were browned in.
Meatballs release a lot of fat and browned residue, and the gravy should be made in that pan.
Swedish-style cream gravyΒΆ
The classic grΓ€ddsΓ₯s, served with meatballs, mash and lingonberry.
- Brown the meatballs in butter; lift them out.
- Make a roux with 30 g butter and 2 tbsp flour in the same pan.
- Whisk in 400 ml beef stock, then 150 ml double cream.
- Add 1 tsp soy sauce for colour and 1 tsp redcurrant or lingonberry jelly for balance.
- Simmer gently β never boil once the cream is in β and return the meatballs to warm through.

Brown onion gravyΒΆ
For a British or pub-style plate with mash:
- Brown the meatballs, remove.
- Caramelise a sliced onion in the fat, 20 minutes.
- Flour, stock, simmer. See onion gravy.
Simmering the meatballs in the gravyΒΆ
Returning the meatballs to the gravy for 10β15 minutes is not just reheating β they release more juice and gelatin, and the gravy gets better. Keep the heat low so they do not toughen.
β οΈ Watch out
Don't crowd the pan when browning. Meatballs steam rather than brown, you lose the fond, and the gravy has nothing to build on.
